Those of you who have been around for a while know that I love nothing more than packing up some food and going out for a picnic. So when I realised that it was National Picnic Week (15th – 24th June) I had to write a post in honour! Here are some picnic food ideas to get you started.
Picnics
Picnics are brilliant for a number of reasons! They are cheap, outdoors, exactly what you want to eat, designed for your personal dietary requirements and can be eaten as soon as you feel the urge or find the perfect spot. To me that makes a winning combination.
I love picnics wherever I am in the world – be it city, countryside or on up a hill somewhere. I’m notorious for always (and I mean always) having a flask of tea with me too. We even picnic in the winter – now that’s dedication to picnics right there!

Despite me banging on about how great picnics are, I thought I would share with you some picnic food ideas that you can use for preparing for your al fresco meals this week. My main tip is that you need to have some easy store cupboard classics that you can rustle up at the drop of a hat. You know how the British weather can be…

Breakfast Omelette Muffins
The best things about breakfast omelette muffins is that you use veg from the freezer and you can pop them into the oven while you grab a shower and pack the car. They take a mere 5 minutes to pull all the ingredients together and then you bung them in a preheated oven for 18-20 minutes. Box them up with a bit of sauce and you’re good to go.

Folded Quesadillas
Folded quesadillas are one of my favourite go to picnic meals. In fact, we have them on train journeys too as you can eat them standing up. They are fab things as everything is contained inside a tasty parcel! And you can fill it with pretty much anything. It also works brilliantly with vegan cheese and scrambled tofu with frankfurters. Mmmm…
And if you do have that little bit more time, sausage rolls are an excellent picnic addition! In this recipe, I made my own vegan sausages, but on a general picnic day I will use some Linda McCartney sausages from the freezer. Simply, buy some JusRol puff pastry, some veggie sausages and some pickle and you’re good to go.
Leave the pastry to warm slightly at room temperature and heat the oven while frying six sausages.- Cut the pastry into six even rectangles, then spoon some pickle in a line over the pastry.
- Place a sausage next to the line and roll up so that the seam is beneath.
- Continue with them all and place on a baking sheet.
- Brush each with a bit of soya milk (or other milk) and poke three slits into each with a sharp knife.
- Bake at 200C for 18 minutes and you have perfect picnic food!
